Oatmeal Mulberry Cookies

Here's what you'll need

4 1/2 Cups of Old Fashioned Oats

2 teaspoons Baking Powder

1/2 teaspoons Cinnamon

1 Egg

1 teaspoon Celtic Sea Salt

1 1/2 Cup Dried Mulberries

1 Cup Coconut Oil

1 Cup Cooked/Mashed Sweet Potato

1/2 Cup Maple Syrup

2 teaspoon Vanilla

Make it

Pre-heat oven to 350 degrees

Add in half of the oats and all of the rest of the ingredients into a food processor and blend until combined. Transfer mixture into a large bowl and add in the remaining oats and stir. Flatten one inch sized balls on to a cookie sheet.

Bake until lightly browned, approx. 15 minutes. Let cool and serve. Makes about 24 cookies
