Quinoa Veggie Blend

Here’s a full meal in minutes. Enjoy a quick blend of quinoa and vegetables to provide you with amazing nutrients and protein.

Here’s what you will need 1 Cup Cooked Quinoa Extra Virgin Olive oil 2 Cloves Garlic Finely Chopped 1/4 Cup Pine Nuts 1 1/2 Cups Chopped Broccoli 1 Chopped Red Pepper 1 Cup Cooked White Beans 1 Large Chopped Tomato Celtic Sea Salt Water

Make it

In a medium sauté pan heat the olive oil and garlic at a medium heat, once garlic starts to brown add in the broccoli. Throw in a dash of water and allow the broccoli to turn a bright green, then add in the white beans and red peppers, let this cook for about five minutes. Finally add in the tomatoes and season with a bit of salt to taste. Serve over a bed of quinoa and enjoy!
